This Chocolate Banana Bread is adapted from my eggless Banana bread recipe. As usual I have a kutty story  (Small story) for this recipe as well.. Vin is starting 3rd grade from tomorrow. (Yay.. Finally.. the virtual school year begins!) He was waiting for the school to start, to see his friends mostly. Every year we have this sweet way to begin our school year. I pack his favorite snack for snack time or his favorite lunch box packed. Unfortunately, as it is virtual school this year, Vin asked if I can make him chocolate cake. I wanted to rescue my ripe bananas lying on the counter. So I decided to go with Banana chocolate bread..

Have you tasted this Britania’s Milka Wonder cake? Oooh.. those small sized loaf breads are my fav snacks back in 90’s. I love the orange and chocolate flavor cake. 75% of the cake will be Orange flavor and the top portion will be Chocolate cake. Since I started to bake, I always wanted to try the combination cake without mixing them together like the marble cake. (Of course Marble cake is our fav!)

Things to note

Sift the flour with Baking Powder Baking Soda

Do not add more than the mentioned baking powder, Baking soda for this recipe. Sifting the flour with baking powder gives a lighter flour and a beautiful texture to the cakes. It is also easier to incorporate the flour with wet ingredients when sifted. If you add more than mentioned baking powder, your cake taste bitter and fail to rise. Too little baking powder will make your cakes tough.  Do not let the cake batter sit for a long time after adding baking powder. Bake the cake immediately.

Butter Vs Oil

I have tested this recipe with butter and oil, they both are great. When you add butter instead of oil, it gives even more softer and fluffy cakes. You can use any neutral oil as well. So feel free to use butter in the place of oil.

Eggs

If you would like to use eggs to this recipe, you can add 1 egg and reduce the ripe banana count to 3. So add 1 egg, 3 ripe bananas. 

Eggless banana Chocolate Bread

For the chocolate batter

Do not add more than mentioned cocoa powder for this recipe. For the Banana Bread I have used 11/2 cups flour and Chocolate batter – 1/2 cups. So the above measurement is for 2 cups of flour. You can interchange the whole wheat flour with all-purpose flour if you’d like. Always use beaten curd, make sure the curd is not sour. Tap the pan

One final step, also the key step is do not forget to tap the pan on a level surfaced 2-3 times. It removes any  air bubbles that has been trapper to escape from the pan.

Grease the pan well and flour the pan helps the cake to come out clean.

How to make Banana Chocolate Bread

Some tips to BAKE the perfect CAKE !

  • Right temperature. Preheat the oven before you start preparing to bake.
  • If using eggs, place eggs in room temperature.
  • Sift the flour with right amount of baking powder and baking soda.
  • Do not overmix the batter too much.
  • Grease and flour the pan 
  • or Use a parchment paper / sheet on the pan
  • Do not forget to tap the pan before baking 
  • Do not open the oven in the middle of baking time. 
  • Always the cool the cake and do not rush.
  • Invert the pan only when the cake is cool, and the sides or the edges of cakes shrinks.

Firstly, Preheat the oven at 350°F OR 180°C. (If using butter (unsalted), melt the butter and keep aside).

Banana Batter

Firstly, Peel the skin and mash 4 ripe bananas and keep aside. Secondly, Bring a wide mixing bowl and add 1/2 cup oil or melted butter. To this, add 1/2 cup sugar. Mix the sugar and oil well until the sugar dissolves.

Furthermore, add the ripe bananas to the mixture and stir them well. You can puree the bananas as well.
Now, bring a sifter over the mixing bowl and add 11/2 cups whole wheat flour.  Add 1 1/2 tsp baking powder and 1 tsp baking soda.

Sift the flour and mix them to form a cake batter. Add 2 tbsp milk and mix well. Keep aside.

Chocolate batter

Firstly, In a wide mixing bowl add 1/4 Cup beaten Curd, 2 Tbsp oil or melted butter, and 1/4 cup sugar. Whisk them well until sugar dissolves. Bring a sifter over the bowl.

Furthermore, Add 1/3 cup whole wheat flour (6 Tbsp), 2 tbsp cocoa powder, 1/4 Tsp Baking powder, 1/8 tsp baking soda, and 2 Tbsp water.  Mix to combine well to form a smooth chocolate batter.

Lastly, Bring a cake pan or loaf tin. I have used a 9 X 5-inch loaf pan. Grease the cake tin or loaf pan with butter/oil or cooking spray. Sprinkle and dust the pan with flour.

Now pour the banana batter to the cake pan. Level it well. Top the cake batter with chocolate chips.
Furthermore, add the chocolate batter on top of the banana batter. Level it well. Top the batter with some chocolate chips.
Tap the pan twice gently on the working surface.

Bake the cake for 45 to 50 mins at 350°F OR 180°C. Remove the cake from the oven. Insert a toothpick to the center of the cake and check if it is done. The toothpick should come out clean.

Cool the cake completely on a wiring rack.  Finally, Once the cake cools down completely, remove from the cake pan and slice the cake. Enjoy the Chocolate Banana Bread

    Tried and tested! It’s great. Also works well with 1 cup whole grain flour and 0.5 all purpose for the banana batters; jaggery instead of sugar; halving the butter. Thanks for the recipe!
