So that being said, what are you making for new year? I am making this super easy Carrot Halwa. Many of our readers had asked for sweet recipes and one Instagram follower specifically asked for Carrot Halwa recipe when we posted our Carrot Semiya Payasam. So Carrot Halwa it is to being this new year. We are in Provincewide Lockdown now, and unable to buy stuffs. So I decided to make Carrot Halwa or Gajar Halwa for new year, without condensed milk. Just few carrots, milk, nuts, ghee and secret ingredient – ‘Patience’.  

Carrot Halwa or Gajar Halwa is a famous Indian dessert made during winter season in parts of North India. Carrot has amazing health benefits and you might also like our other Carrot recipes. Vin my son, GS my husband are huge fan of carrot and they are sweet lovers too. So this Halwa is our family favorite and doesn’t fail to impress our guests.

Things To note

Saute the Sweet Potato in ghee

Always saute the grated carrots in ghee for 5-8 minutes until it changes color and shrinks. Only after that add milk and simmer. Sauting the carrots in ghee enhances the flavor of the halwa. 

Milk

For rich, tasty carrot halwa always use full fat (whole milk). Boil the milk and cool down before you add it to make the halwa. 

Saffron threads

Soak 10-15 saffron threads in 3 tbsp of milk to give a rich flavor and taste. However, this is optional.

Firstly, boil 1 cup of whole milk (full-fat milk) and take 3 tbsp milk from and keep aside. Cool the rest completely. In a bowl add the 3 tbsp hot milk and add saffron threads and let it soak, keep aside.

Carrot Halwa Step 1
Next, wash and peel 3 long carrots and grate them. Roughly measure the grated carrot it should come around 1 1/2 cups. Keep aside.

In a wide-bottomed pan, add 1 tbsp of ghee and add the chopped nuts. You can use Cashews or almonds. Add raisin and roast until they turn golden brown color and keep aside.

Carrot Halwa Step 2
Use the same pan, and add 2 tbsp of ghee and add the grated carrot.  Saute the carrot in medium-low heat until the color changes for about 5-8 minutes. The carrots shrink in size and changes color, there is also no raw smell. 

Carrot Halwa Step 3

Now add 3/4 cup of milk to the pan and give a quick mix.  Let it boil for about 10 minutes on medium-low flame.

Carrot Halwa Step 4 The carrots get cooked in the milk and, the milk now will be reduced to half the size. Furthermore, add 1/4 cup sugar, add 2 tbsp of saffron soaked milk to the pan and give a quick mix. Keep stirring in medium-low heat. The mixture slightly loosens after adding sugar. It starts to thicken and leaves ghee in 5 minutes.Continue to stir until the ghee oozes out from the halwa.  Now, at this stage add 1 Tsp Cardamom powder, roasted nuts, and stir well.

Lastly, reduce the flame to low heat and add 1-2 tbsp of ghee to the halwa and continue to stir.
At this stage, the milk is fully absorbed and the halwa turns into a mass and leaves the pan.

Switch off the flame and transfer into a bowl. Finally, garnish with slivered almonds and enjoy the Carrot Halwa. Best served with ice cream, so YUM!

Ingredients

  • 1 1/2 Cups Carrot grated
  • 3/4 Cup Whole Milk (Full Fat) Boiled & Cooled

  • 10-15 Cashews broken
  • 10-15 Raisins
  • 10 Saffron threads Optional
  • 3 Tbsp of warm milk To soak saffron threads
  • Slivered almonds for garnishing
