Things to note

Ghee

Be generous with the ghee, and saute the grated carrots in ghee until they change color and aromatic.  By saluting the carrots in ghee gives an amazing flavor. Add the jaggery, only after the carrots change color and raw smell leaves.

Pro Tip 

Always cool the stuffing completely before you stuff to the poli. If it is warm or hot, the filling will come out while you roll the poli.

Knead the dough

Dough plays a very important role in making the poli. Add water little by little while making the dough. Knead the dough for 10 minutes and let it rest for 30 minutes. The dough should not be too soft like chapathis, or not too tight like the poori dough.

Other options to make the poli

Take a chapati dough ball, coat them well with the flour and roll it into small chapati. Now, place the stuffing ball inside the chapati. Make pleats and complete the whole circle and seal the edges. You can also pinch off the excess dough. Gently press the dough, and apply some oil. Coat again with some flour and roll the dough balls to poli. Care should be taken not to apply pressure, just roll it gently without tearing off.
Repeat the same for the entire dough.

Storage & Serving

You can make ahead the stuffing and refrigerate them,. (Cool Completely) Before you make the poli, make sure the stuffing is brought to room temperature. Or slightly warm them, and cool down. If you have leftover poli, roll them in aluminum foil, or ziploc and refrigerate it, stays fresh the next day. Warm the poli before you serve. Serve the carrot poli with ghee!

Firstly, in a wide mixing bowl add 2 cups of wheat flour.  Add salt to the flour, give a quick mix.
To this add water little by little and make a soft pliable dough.

 Knead the dough for 10 minutes. The dough should not be too soft for chapathis, or not too tight like the poori dough. Add 1 tbsp of oil to the dough, cover the bowl and rest it for 30 minutes.

Meanwhile, wash and peel 3 long carrots. Grate the carrots and keep aside.

 Secondly, bring a wide pan over medium-low heat and add 2 tbsp of ghee.  After the ghee melts, add the grated carrot and saute the carrots in medium-low heat for about 5-8 minutes, until they change color.

Furthermore, add 1/4 cup of grated jaggery and 1/2 – 1 tsp of cardamom powder.  Give a quick mix and continue to saute the carrots along with jaggery.

Jaggery starts to melt, continue to cook in medium-low heat.  At one stage the water is evaporated, and the carrot and jaggery are combined well. The stuffing leaves the pan and forms a mass.

At this stage, switch off the flame, cool the stuffing completely. Always cool the stuffing completely before you stuff to the poli. If it is warm or hot, the filling will come out while you roll the poli.

Furthermore, Now, divide the dough into equal portions, keep aside. Take one dough ball and divide it into two small portions.

Dust them in dry flour and roll into small chapati. Add stuffing in one of the rolled chapatis, and cover them with the other chapati.

Press the sides gently and seal the edges. Dust it with dry flour and roll into a thin paratha. Trim the sides with the plate. Repeat the same for the entire dough.

Heat an iron griddle or a Tawa. The Tawa or the iron griddle should be hot enough to fry the poli.
Add the poli to the Tawa and let it cook for 3-4 minutes. Add 1/2 tsp of oil or ghee.  Now flip the poli and cook the other side for 2 minutes.

Lastly, Add 1/2 tsp of oil or ghee and apply on top of the poli. Gently press the poli to puff them well. Press the sides and let it cook for 2 minutes. Once the poli is cooked, remove it from the pan, and Finally serve the carrot poli warm, drizzle with ghee if you desire. Enjoy the carrot poli !
