Chocolate chip cookie or Choco chip cookies are gorgeous, amazing and so yummy. I love to bake cookies, and cookies with choco chips are our favorite. These cookies are lovely,  every single bite is so flavorful, full of chocolate, delicious and  I love when these choco chips melts in your mouth. They are absolutely lip-smacking.

July is early baking season here, with kids birthday and summer holidays for Vin, I bake a lot during this time. I always wanted to try eggless version of these choco-chip cookies, because when last time my mom visited us she loved these cookies. However, she suggested to make these eggless for paati (grandma) :-). Vin was craving for some choco chip cookie and red velvet muffin this time. So I used this opportunity to bake these cookies eggless.

Well.. I enjoy everything about writing this blog, creating recipes and this time the reason for celebration is…. Guess what., (Drum roll please,…)  This is our 100th Post in the blog.. Yay to me.. !! I wanted special sweet recipe for 100th post. I wanted everyone to try the recipe, so I have included tips to bake these cookies without oven. 🙂

Good news, these beauties are made using Wheat flour (as many of you had asked for). I dedicate this recipe to all my lovely readers and my friends who always keeps encouraging me 🙂 Thank you guys!!

I adapted my Lemon cookies recipe to make these choco chip cookies. Adjusted the baking soda and baking powder ratio to replace the egg. Baking powder and baking soda are the leavening agents for the cookies.

Things to note

How to soften the Butter

DO not melt the butter. Melted butter will yield hard cookies. It is very essential to bring the butter to room temperature and make sure it is softened. Let the butter sit in room temperature for couple hours. Time taken to soften the butter depends upon where you live and the climate conditions. When you gently press on the butter, it should form a dent – that’s how you know the butter is softened and ready to use.

 

 

Pro Tip – Simple trick to soften the butter fast – Fill a tall microwaveable glass with water. Microwave the glass with water for 2 minutes. Pour the water out, and invert the empty hot glass on the butter. The Butter will be softened easily.

Chocolate chip cookie recipe

Granulated Sugar + Brown

Brown sugar is naturally moist, So the baked cookies will be softer and moister. In order to get the dark color in the chocolate chip cookies I have used 50-50 Brown and Granulated white sugar. Also brown sugar gives a beautiful texture to the cookies. You can use either light or dark brown sugar to bake the cookies. You can use powdered white sugar in the place of granulated sugar. 

Egg substitute = Baking powder + water

To make this cookie recipe eggless version I have substituted 1 egg with baking powder and water. There are other substitutes for egg. However, I chose this as it was simple and it yields the same texture, taste, flavor as the cookie baked with egg. For 1 egg substitute with 1 tsp of baking powder + 2-3 tbsp of water. For this recipe it requires, 11/4 tsp of baking powder and 3 tbsp of water. Use only unto 3-4 tbsp of water not more than that. (to make the cookie dough).

Do you want to bake this recipe with egg?

Sure, you can. Beat 1 egg along with butter and sugar. Cream them well and add flour. (follow the remaining steps) Use 1/4 tsp of baking powder only. DO not add more baking powder for recipe with egg. Baking soda remains the same 1/2 tsp. You might not need water, as the egg has moisture in it.

Do I need to use Vanilla extract?

It is unto you. If you would like to add vanilla extract, you can add 1/2 tsp of vanilla extract. We are not a fan, so I have skipped the vanilla extract.

Sift the flour

Do not add more than the mentioned baking powder, or baking soda for this recipe. Sifting the flour with baking powder, baking soda gives a lighter flour and a beautiful texture to the cookies. It is also easier to incorporate the flour with wet ingredients when sifted. If you add more than mentioned baking powder, your cookies taste bitter. Too little baking powder will make your cookies hard.  Do not let the dough sit for a long time after adding the flour and baking powder and soda. Baking powder and Baking soda are added to this cookie to make soft, fluffy cookies. Also they are responsible for the extra brown color in our cookies 🙂

Place the cookies 1″ apart

Remember to grease the cookie sheet with butter or cooking spray. You can line the baking sheet using parchment or butter paper too. Also, remember to place the cookies 1″ apart as they tend to spread while baking. Do not flatten the cookie.

Flour

I have tested this recipe with whole wheat flour and all-purpose flour. Honestly, I did not find any difference at all. It was the same and gorgeous. If you want to replace All purpose flour instead of wheat flour you can. 

Bake without oven

Always use an old heavy bottomed pan / pot with tight lid to cook the cookies or cake on stove top. You can line the pan with aluminum foil and place the cookies directly on the foil to cook. Or alternatively, you can use idli plates to stack the cookies and cook them all at one single shot. Grease the idli plates with cooking spray or oil before you line them with cookie dough. 

How to make cookies without oven

The cookies in the lower idli plates cook faster, remove the idli plate (with cooked cookies) and continue to cook the rest (if it is undercooked). However, the cookies look soft after 25-30 minutes, let it cool completely. Later, the cookies will turn crispy and crunchy. 

Cool the cookies & Storage

I know these cookies are so pretty and irresistible. But let them cool completely on a wire rack and then store them in dry air tight container. Cookies remain fresh up to a week.

Method 1 – Using Oven

Firstly, bring 1/2 cup unsalted butter (1 stick) at room temperature. Preheat the oven at 375-degree Fahrenheit.
Secondly, in a wide mixing bowl, add the softened butter (room temperature) and whisk the butter using a whisker or hand mixer well for 2 mins.
Add 1/3 cup of granulated white sugar, and 1/3 cup of tightly packed brown sugar to the butter.
Cream the butter and sugar. Whisk using a hand mixer or hand mixer for 3-4 minutes at medium speed.

Furthermore, bring a sifter over the bowl and add 1 cup + 2 tbsp of whole wheat flour.
Add the dry ingredients one by one. First 1 1/4 tsp baking powder, 1/2 tsp baking soda, 1/8 tsp of salt.

Lastly, add 3/4 cups of chocolate chip and gently fold the dry ingredients and the wet ingredients to incorporate well.
Add 2-3 tbsp of water slowly and mix well to form a cookie dough. Keep aside.

Grease a baking tray with butter or cooking spray. Make small balls of the cookie dough and place the cookie on the baking tray or cookie sheet 1″ apart.
Alternatively, scoop using an ice cream scooper and place the dough 1″ apart.  If you wish, you can add 2-3 choco chips on top of the cookie dough.
Bake at 375 degrees Fahrenheit  or 190 degree Celsius for 15-18 minutes.

Finally, Cool the cookies completely and enjoy the eggless choco chip cookies with a cup of milk.

Method 2 – Using Idli plate and Pan

Preheat an old pan (With or without aluminum foil) in high flame for 10 minutes. Follow the steps to form the cookie dough. After the cookie dough is formed, grease the idli plates with butter or cooking spray and form small cookie dough balls.

Place the cookie dough on the grease idli plates and place the plates inside the preheated pan.
Allow it to cook for 25-30 minutes in low heat.

Ingredients

Dry ingredients

  • 1 Cup + 2 Tbsp Wheat flour
  • 1/8 Tsp Salt
  • 1/2 tsp Baking soda
  • 1 1/4 Tsp Baking powder
  • 3/4 cup Chocolate chips

Wet Ingredients

  • 1/2 Cup unsalted Butter softened
  • 1/3 Cup Granulated sugar
  • 1/3 Cup Brown sugar tightly packed
  • 2-3 Tbsp Water can use up to 4 tbsps
