Easy Eggless Apple Banana Bread

Hello Mommies, how is the virtual school going on ? Vin loves his virtual school and I am constantly worried about his screen time. (Thanks to Covid!! Grrrr…) Free from packing lunch box, however there is constant question from Vin asking- ‘What do you have for snacks? what’s for breakfast?’ So, every week I make these fruit breads, or combination (Fruit + Chocolate) bread and this helps me a lot. Fruit breads are always easy to make and am sure kids will love it. Before the kids return from the school (oh, I mean the virtual school) make these bread ready and enjoy !

Things to Note

Oil Vs Butter 

You can replace melted unsalted butter in this recipe in the place of oil. Works like a charm. 

Apple, Banana Puree

Make sure to mash the ripe bananas well so there are no chunks left. You can also grind the banana using a blender and add to the batter. I have grated the apples, you can puree them instead.

Sift the flour with Baking Powder Baking Soda

Do not add more than the mentioned baking powder, Baking soda for this recipe. Sifting the flour with baking powder gives a lighter flour and a beautiful texture to the cakes. It is also easier to incorporate the flour with wet ingredients when sifted. If you add more than mentioned baking powder, your cake taste bitter and fail to rise. Too little baking powder will make your cakes tough.  Do not let the cake batter sit for a long time after adding baking powder. Bake the cake immediately.

Can I make this bread with eggs? 

Sure, you can make this cake with eggs. Make sure the eggs are in room temperature. For the apple batter replace 1/4 cup of curd with 1 egg. You might need less milk in that case, adjust accordingly. Similarly for the chocolate batter replace 1/4 cup of curd with 1 egg. 

Curd / Yogurt

Honey or Vanilla extract 

You can replace 1 tsp of Vanilla extract in the place of Honey for the banana cake batter.

Tap the pan

One final step, also the key step is do not forget to tap the pan on a level surfaced 2-3 times. It removes any  air bubbles that has been trapper to escape from the pan.

Flour the pan

Grease the pan well and flour the pan helps the cake to come out clean.

Some tips to BAKE the perfect CAKE !

  • Right temperature. Preheat the oven before you start preparing to bake.
  • If using eggs, place eggs in room temperature.
  • Sift the flour with right amount of baking powder and baking soda.
  • Do not overmix the batter too much.
  • Grease and flour the pan 
  • or Use a parchment paper / sheet on the pan
  • Do not forget to tap the pan before baking 
  • Do not open the oven in the middle of baking time. 
  • Always the cool the cake and do not rush.
  • Invert the pan only when the cake is cool, and the sides or the edges of cakes shrinks

Firstly, preheat the oven at 350°F or 180°C for 15-20 minutes. If using butter for this recipe, melt 1/2 Cup + 2 Tbsp unsalted butter and keep aside.
Wash, pat dry 2 medium-sized apples and peel the skin. Grate the apples, keep aside. (Alternatively, you can also make a puree by grinding them in a blender).

Apple Batter

Firstly, in a wide mixing bowl, add 1/4 cup oil (or melted butter) and 1/4 cup beaten curd. Along with these, add 1/4 cup brown sugar. You can use granulated white sugar instead.

Mix until combined well. Now, add the grated apples, and bring a sifter over the bowl.

Add 1 cup of whole wheat flour, 1 Tsp baking powder, 1 tsp baking soda, 1/2 tbsp ground cinnamon. Sift the flour.

To the flour, add 1/4 cup warm milk and mix gently. Keep aside.

Grease a 9X5 inch loaf pan with cooking spray or butter. Flour the pan and discard the excess flour.
Pour the apple cake batter into the pan and spread evenly. Keep aside.

Banana Batter

Peel the skin of 2 ripe bananas and mash them well. You can grind them in a blender as well. Keep aside.

Furthermore, bring a wide mixing bowl and add 1/4 cup of oil (or melted butter), and add 1/4 cup brown sugar. Cream oil and sugar until combined well.

Now, add the mashed bananas to this and bring a sifter over the bowl.

To the sifted flour, add 1/4 cup warm milk, 2-3 chopped nuts, honey. Mix well to form a cake batter. Keep aside.

Chocolate Batter

Lastly, in a mixing bowl, add 1/4 cup beaten curd, 1/4 cup sugar, and 2 tbsp oil. Whisk well until sugar dissolves.

Bring a sifter over the bowl and add 1/3 Cup of whole wheat flour, 2 Tbsp cocoa powder, 1/4 Tsp baking powder, and a pinch of baking soda. Add 2 tbsp of hot water and mix to combine well.

Finally, pour the cake batter on top of the banana cake batter, spread evenly.  You can add chopped nuts, choco-chips too. If you wish, use a skewer, to make lines on the cake batter.

Tap the baking pan 2-3 times and bake the cake at 350°F or 180°C for 45-50 minutes or until the toothpick comes clean when inserted in the middle of the cake.

Cool the cake completely on a wire rack and remove the cake from the pan. Slice the cake pieces only after it is cooled down completely.
