Are you a fan of ‘Good Day’ Biscuits? I love their Badam Pista flavor. This is something close to that and perfect for evening tea time or a quick evening snack for your kids. This was a long pending recipe on my recipe book that I wanted to make, however I been procrastinating it for a while. Finally, I made it and my family enjoyed it. This recipe inspiration comes from my Cashew cookies (Kaju Cookies) which I made for a friend who was expecting. I always wanted to experiment with nuts and flavors with the basic cookie recipe, and here it is. Finally, Viola! First I made these cookies, chilled only for 30 minutes and made them round shape. Taste was good, but somehow I did not like the texture. I was not ok to proceed with the photo, so I made them next day again, and chilled the dough for 1 hour.

Now, I was able to slice them beautifully. These biscuits reminded me of Karachi biscuits which is very famous in Hyderabad. Honestly, I am falling in love baking with whole wheat flour these days. I did not find any difference in taste or texture. These cookies are crispy, tasty and full of nuts and flavors. My kids enjoyed them and as I am writing this post, I am dunking one biscuit in my coffee, relishing every single bite… Hope you will too, lets check out the recipe. ūüôā

Almonds, Badam as commonly known in India, has lot of health benefits. Reduces cholesterol, lower the risk of cancer and heart attack. Helps to strengthen the bones and teeth.  Almond provides excellent brain function and increases intellect.  Also, aids in weight loss as it contains healthy fats.

Pistachios or Pista nuts are small green nut covered in a shell. Pista boosts immune system. Gives relief in constipation, improves body metabolism. Also, reduces the risk of heart attack and strokes. Pista nuts helps in wound healing and cellular growth.

Things to Note

Almonds & Pistachios

I have ground the almonds (Badam) to fine powder. You can coarsely grind them or chop the almond into fine pieces. You can grind the pistas as well. Also, you can increase the chopped pistas up to 4 tbsp for rich flavor.

How to soften the Butter

Do not melt the butter. Melted butter will yield hard cookies. It is very essential to bring the butter to room temperature and make sure it is softened. Let the butter sit in room temperature for couple hours. Time taken to soften the butter depends upon where you live and the climate conditions. When you gently press on the butter, it should form a dent – that’s how you know the butter is softened and ready to use.

 

 

Pro TipSimple trick to soften the butter fast РFill a tall microwaveable glass with water. Microwave the glass with water for 2 minutes. Pour the water out, and invert the empty hot glass on the butter. The butter will be softened easily. 

 

Eggless Almond butter cookies

Brown Sugar Vs Granulated 

I have used brown sugar in this recipe to get the nice brown color in cookie. You can use the same measurement of granulated sugar, or jaggery powder as well. You can increase another 2 tbsp if you want extra sweet.

Warm Milk and saffron threads

Add a generous pinch of saffron threads to 1/4 cup of warm milk and add it to the flour. It enhances the flavor of the cookies.

Why Refrigerating the dough is important ?

Refrigerating or chilling the dough before baking helps to solidify the fat in the cookies. The fat in the chilled dough takes longer to melt than room-temperature fat. This makes the cookies to spread less as the fat remains solid for a longer time. You need not knead the dough for a long time, just combine all the ingredients well to form a dough. You can add may be 2-3 tbsp of flour to the dough if it is sticky. But once you chill the dough, the dough will become firm.

Slice &  Bake method

I have adapted the slice and bake method to bake these cookies. All you need is to chill the dough, slice them and bake it for 12-15 minutes until the edges turn golden brown. You can also roll the dough and cut into desired shape. 

Other variations

You can grate a pinch of nutmeg and make the dough.

Firstly bring 1/2 cup of unsalted butter to room temperature and let it soften. Next, take a clean, dry mixer and grind 1/4 cup of almond to a powder. It is alright if you ground coarsely. Keep aside.

In a small bowl add 1/4 cup of warm milk and add 1/4 tsp of Saffron threads and let it soak well. Keep aside.

Bring a wide mixing bowl, add 1/2 cup of unsalted butter softened, 1/4 cup (+ 2 tbsp sugar if you want to be extra sweet.) Cream the butter and sugar.

Now add 1 cup of whole wheat flour, 1/4 cup ground almond flour, 1/2 tsp cardamom powder.

Furthermore, add saffron soaked milk, and chopped pista. Mix and combine well to form a dough. You need not knead the dough, use 2 tbsp of whole wheat flour if it is too sticky.

Finally, place a plastic wrap and place and dough. Roll the dough using rolling into a rectangular shape. Gently fold the sides to half and fold the dough 2X.

Cover using the plastic wrap and refrigerate for a minimum of 30 minutes to 1 hour. An¬†hour later, preheat the oven to 350¬įF¬†or 180¬įC¬†for 15 – 20 minutes. Now bring the chilled dough to a baking tray. Slice the dough into small rectangular shapes and arrange them.¬†

Bake the cookies for 12-15 minutes or until the edge turn golden brown.

Ingredients
