Easy Pizza Dough recipe

Honestly, I never knew making pizza can be this easy. Back in 2007, When I lived in Pune with my friends, my friend Avantika, often used to ask me to make pizza. I used to wonder then, if anyone can make pizza at home. 

Now, there is one thing that our whole family agrees is Italian ! I love Italian food, enjoy making it and having it 🙂 Check out our easy Italian RecipesVin loves pizza and I tried making the pizza one day to surprise him, and he completely enjoyed it. He invited his friend Atharv home for pizza night. (I was truly panicking that night, because it was first time I was going to make the pizza from scratch.) But thankfully, boys enjoyed the pizza.:) So this Pizza recipe is for my lovely son Vin who is the reason behind my messy kitchen 🙂 And to my dearest friend Avantika, who always encourages me to try and explore new things, and who stays positive no matter what!

From Scratch 

There is so much joy in making something from scratch right. I love to bake from scratch, its time consuming, but there is no better joy in seeing the final re-creation of the recipe. Things that I love about making pizza is, waiting to see the yeast active and the yeasty smell fills your kitchen. The beautifully fermented pizza dough is such an accomplishment for me. I go messy, dusty kneading the dough (you can see that in the video yourself – LOL) but who cares, hello, we are baking here.. We need to show some proof after all..

I keep trying many pizza recipes to make the perfect pizza dough. I have tried the overnight fermentation, the easy recipe. Finally, I found this recipe which worked great for me, however I tweaked a bit. Changed the measurement to make the perfect fail proof pizza recipe and I have been making this almost every month now. 

Things to note

Yeast

I have used active yeast in this recipe, you can use instant yeast as well. I have tested this recipe with instant yeast. You might need 1 1/2 Tsp Instant yeast. If using Instant yeast you need not proof it. You can directly add all of the ingredients directly to the flour, mix it and form a dough. 

Proofing the yeast

Use exactly 11/3 cups of water only. DO not use less or more than that. Also, water should neither be too hot or not cold. Water should be warm, hot water will kill the yeast and cold water will not activate the yeast. So make sure that the water is only warm. (Tip – Microwave water for 30-40 secs). Always add sugar, water and yeast to activate the yeast.

All-purpose flour

I have used unbleached all-purpose flour, (I always suggest and use unbleached) as the unbleached flour has more protein compared to the bleached flour. You can use bread flour, whole wheat flour as well in this recipe. However, water needed might be little more.  You might need 1 1/2 cups of water for whole wheat or bread flour. 

 

 

Salt

Do not add salt to the yeast. Yeast will consume the sugar and starts to grow. Adding salt to the yeast along with sugar will slow the process.

Knead the dough & Ferment the dough

Yes, once you add all the ingredients and try to form the dough, it will be sticky. You can add 1/4 cup – 1/2 cup of flour and knead it. The dough has to be sticky for this pizza recipe. Keeping kneading for 10 minutes and form the dough. Grease the dough and bowl with olive oil. Place the dough in the bowl, wrap in the plastic wrapper and let it ferment. Fermentation takes time depending on the place you live. 

Tip to ferment the dough

Turn the lights on in the oven and place the bowl inside, the dough will ferment in 60-90 minutes. 

Or, you can preheat the oven to the lowest heat and TURN Off the oven. Place the bowl inside the oven and let it sit there for fermentation.

Olive Oil

Olive oil enhances the flavor of the pizza. You can add 1/2 tsp of garlic powder too, along with flour. It will be absolutely delicious. Do not forget to brush or apply oil after shaping the pizza, before adding the pizza toppings. This helps prevent the crust to become soggy and tastier.

Pizza stone / Iron cast tawa

Always preheat the oven along with the pizza stone. This helps the pizza to cook/bake evenly. Only if pizza stone is hot enough, the crust will turn brown and crispier. You can use baking tray to bake, if you do not have pizza stone. Or you use the Iron cast Tawa, works every time for me.!

Shaping the pizza

I have showed you how to shape the pizza in the video. I have place on the dosa pan and shaped the pizza. Make the crust littler thicker. 

CornMeal

Always sprinkle cornmeal to the counter top or the baking tray or pizza stone, before placing the pizza dough. Cornmeal helps the pizza dough to easily slide on the pizza stone. 

How do you know if the pizza is done

After 12-15 minutes when the cheese melts, just slightly flip your pizza and take a peak. If the crusts are brown and the pizza has turned brown, then its is done. When you cut the pizza, those beautiful porous texture on the crust tells you if you have kneaded the pizza right. 

Storing the dough & Shelf life

This recipe yields 2 dough for 12″ Pizza . So if you do not plan to use the second dough, Grease the dough with oil, cover with plastic wrapper and you can refrigerate up to 24 hours. You can freeze the dough similarly and use up to 3 months. 

Storing the pizza

Refrigerate the leftover pizza using a plastic wrapper and reheat the pizza before serving.

Proof the yeast

Firstly, In a small bowl, take 1 packet of active dry yeast (2 1/4 tsp), 1 tbsp sugar, and add 1 1/3 cups of warm water. Stir well until the mixture looks foamy.

Secondly, Cover the bowl with a kitchen towel and let it proof for 10 minutes.
10 minutes later, the mixture bubbles and develops a yeasty aroma. The yeast is good and active. Keep aside.

Make the dough

Firstly, In a large wide mixing bowl, add 2 1/2 cups of all-purpose flour. Furthermore, Add salt, olive oil, and give a quick mix. Pour the yeast solution to this and mix to combine well.

Now, when you try to form the dough, it should be sticky. This is the right consistency to make the pizza dough.

Dust the working surface with flour and knead the dough with 1/4 – 1/2 cup of dough if needed.
Bring it to a firm, slightly sticky dough. Knead for around 10 minutes. Fold the edges to make a ball and grease the dough ball with oil.

Grease a wide mixing bowl, (large enough to hold the doubled the size of the dough) with olive oil and place the dough inside the bowl.

Finally, Cover the bowl with plastic wrap and keep it in a warm place to ferment for about 60-90 minutes.
The dough is fermented and doubles the size after 60 – 90 minutes. Punch in the center and scrape all the sides and form a firm dough. Knead shortly, and divide the dough into two equal parts.

If you are not going to use the second dough, you can grease the dough with oil, cover with the plastic wrap and refrigerate for 24 hours. Or you can freeze it for 3 months.

Make the pizza

Firstly, preheat the oven at 475°F or 250°C for 20-30 minutes.
Place the pizza stone or baking tray in which you are going to bake the pizza inside the oven and preheat along with it. If you do not have either of these, use an iron cast Tawa to bake the pizza. Place the Tawa inside the oven and preheat.

Meanwhile, sprinkle cornmeal on the working surface and spread the dough with your knuckles.
If you are not confident enough, spread gently with your hands.
Or you may use the rolling pin to spread the dough to round shape.
To shape the dough, you can use any round pan, (a preferably oven-safe baking pan that you can use to bake the pizzas as well).
Place the dough on the pan and shape the edges and make the crust slightly thick.
Brush the pizza dough with 2 tsp of olive oil and apply evenly. This helps to crust to brown and cook evenly. This also helps the pizza from becoming soggy. Let it rest 10 minutes before you top the pizza.

Toppings and Bake the pizza

Firstly, in a baking sheet or on the working surface, spread the aluminum foil or parchment paper.
Now, Sprinkle with cornmeal and place the pizza dough on it. Slightly shape the dough if it goes out of shape.
Furthermore, Add your favorite toppings to the pizza dough.
Add 1/2 cup of pizza sauce to the dough. Little by little and spread evenly. Now, add the grated mozzarella cheese (You might need about 1/2 – 3/4 cup)
Now add your favorite vegetable toppings like onions, green bell pepper, mushrooms, and black olives.
Sprinkle extra cheese if you may like.

Finally, sprinkle 1 tsp of Italian Seasoning. Now, if you are confident enough you can slide the pizza dough to the pizza stone directly to the oven. Or bring the pizza stone carefully to the work surface and place the pizza on the pizza stone and bake it for 12-15 minutes. Bake the pizza until the cheese melts and the crust turns brown. Enjoy the homemade pizza with your family.
