 is a ‘must have’ mix at out homes right. When you have idli batter, half your work is done. The remaining Half of our job is covered by this super easy idli podi or millagai podi. This is a perfect lunchbox recipe or a quick breakfast recipe for busy moms or for any lazy days. 

There are many of my favorite restaurants in and around Chennai. But, there is this one local road side vendor my friends and I enjoy having  ‘NEI PODI’ Dosai any time. Yes of course, its our favorite, none other than Pondy Bazar’s chellamana – Brilliant Tutorials ‘Thalu vandi’  Kadai. (roadside shop) 🙂 Only recently, I came to know that it is called ‘Sapthagiri’ and as they are located near Brilliant tutorials and named after the landmark.. Amazing flavor, soft, crispy dosai, they are known for their nei podi dosai. Oh I miss Chennai, I miss food !!

Inspired by their nei podi dosai, I grabbed the Idli Podi recipe from mom and enjoyed it. Idli millagai podi is a comfort food. I grind this podi whenever I find time as Vin loves the podi idli. Especially when its sauted and tempered with the dals and spices. Lovely flavor and taste, lunch box comes  home neat and clean. GS is not a fan of Idli Millagai Podi, so I make this mix often, with all the tempering and rich in sesame oil, boys enjoy the podi idli, and that special nei podi dosai with the extra ghee – Me 🙂

Things to note to make the podi

Dry Roast 

Always dry roast the dals and dry red chili in medium low heat. Dry roast until the the dal changes color and turns aromatic.

Hing

Add a generous pinch of hing / Asafetedia before grinding, which enhances the flavor. Adjust the salt before grinding. 

Double the recipe & Storage

Always cool the mixture before grinding into coarse powder. Store in airtight container. Podi will remain fresh and stays good for a month if maintained good. Always use dry spoon while using the powder. You can double the recipe. Works great.

Podi Idli flavor

Always use sesame oil to eat the podi with idli. To temper and make the podi idlis, use sesame oil for amazing flavor and taste. Curry leaves gives a great aroma. Alternatively, you can use ghee, however sesame oil tastes amazing.

Salt

do not add salt to the Idli Podi, as we have already added salt to the podi and also to the idlis.

Nei Podi dosai 

Make dosas on hot Tawa for crispy dosa. Adding ghee gives an amazing flavor to the Idli Podi. Do not skip it. You need not flip the dosai and cook. Remove the dosai once they turn brown and crips on the sides and in the middle.

Lets check out the recipe

Firstly, bring a wide pan over medium-low heat. Add 10 dry red chili, and dry roast 2 minutes.
Secondly, add the channa dal and urad dal along with red chilis. Continue to dry roast the dals along with red chili until it turns aromatic.

Idli podi step 1
In about 7-8 minutes, the dals change into golden brown color. Switch off the flame, Transfer the dal and chili to plate and cool completely.
Furthermore, transfer this mixture to the dry blender mixer.

Add a generous amount of hing / asafoetida, salt and grind into a coarse powder.
Transfer this powder to an air-tight container and use it for a month. Enjoy the idli-miallagai podi.

Idli millagai podi

 

Podi Idli

Grease the idli pans with sesame oil.  Add idli batter to the idli molds and steam the idli for 10 minutes. Once done, cool the idli, remove the idli from the plates and Keep aside.

Bring a wide pan or Kadai over a medium flame and add 2 tbsp of sesame oil.
Add the ingredients under ‘ to temper ‘ and let it sputter.

Furthermore, add the idlis and gently mix the idli along with spices to combine well.


Drizzle 1 -2 tsp of sesame oil if needed.
Switch off the flame and enjoy the podi idli.

How to make podi idli

 

 

Nei Podi Dosa

Bring a dosa pan over a medium – heat flame. Check if the Tawa is hot by sprinkling some water.
If the pan is hot enough, it makes a hissing sound when you sprinkle water. This is when the pan is ready to make dosas.

Nei Podi Dosai step 1
Add 1 ladleful of dosa batter, add another 1/2 ladle full of dosa batter, and spread evenly forming a circle from inside towards out. Drizzle with ghee. (1-2 tsp)

Nei Podi Dosai step 2
Sprinkle 1/2 tbsp of idli millagai podi over the dosa and drizzle ghee if you desire.
Let the dosais cook for 2 minutes, and turns crispy.

Nei Podi Dosai step 3
Remove the dosas from the pan fold it serve with chutney, sambar or simply enjoy the nei podi dosa.

Ingredients

Idli milagi podi mix

  • 10 Dry red chili
  • 1/2 Cup Channa dal
  • 1/4 Cup Urad dal
  • Generous pinch of Hing
  • Salt

Podi Idli

    To Temper

    • 1 Tsp Mustard seeds
    • 1/2 Tsp Channa dal
    • 1/2 Tsp Urad dal
    • Pinch of hing
    • Spring of curry leaves
    • 1 Tbsp Idli Millagai podi

    To Make idlis

    • 1 cup idli - dosa batter To make - 15 mini idlis or 8 idlis cubed.
    • 2 Tbsp Sesame oil To grease & Temper

    Nei Podi Dosai

    • 1 Cup Idli dosa batter
    • 1/2 - 1 Tbsp Idli Millagai podi
    • Ghee to Drizzle
